I just got a mid-semester break for 2 weeks and I'm so sooo excited! I decided to make a lot from it by improving my French and learning how to bake lots and lots of different cakes and cookies while it lasts! Been going through a lot of food blogs and fortunately, I've been getting abundant ideas from amazing cooks.
Today I made amazing Nutella filled cookies. These cookies basically have everything good about desserts and they're so easy to make.
Not so healthy I must confess, but they're worth trying! ;-)
Recipe from Ambitious Kitchen through Cherry On My Sundae
Total Cooking time: 2 hour 30 minutes
Makes 2 dozen cookies
Ingredients
2 1/4 cup all-purpose flour
1 1/4 tsp baking soda
1/4 tsp salt
1 cup unsalted butter
1 1/4 cup packed dark brown sugar
1/4 cup granulated sugar
1 large egg plus 1 egg yolk
1 1/2 tsp vanilla extract
1 tbsp plain greek yogurt
3/4 cup semi-sweet chocolate chips
1/4 cup milk chocolate chips
1/4 cup dark chocolate chips
1 jar of Nutella, chilled in refrigerator
coarse sea salt for sprinkling
Directions
- Combine the dry ingredients including the flour, baking soda, and salt in a medium bowl and set aside. To brown the butter, melt the butter over medium heat until it begins to foam, whisking constantly. After about 3 minutes, the butter will begin to brown and emit a nutty aroma; when the butter reaches this stage it is done. Remove from heat and transfer to a bowl. Cool for a few minutes.
- Beat the butter, brown sugar, and sugar until it has properly creamed. Add in the egg, yolk, vanilla and yogurt and beat until mixed together. Add 1/4 of the dry ingredients at a time, beating on low speed just until the batter comes together. Add the chocolate chips and mix together with a wooden spoon.
- Cover the cookie dough and chill for 2 hours or freeze for 30 minutes to allow the dough to relax.
- Preheat the oven to 350 degrees F. Remove the dough from the refrigerator or freezer and measure 1 1/2 tbsp of the dough. Roll the portions into balls. Flatten each ball and scoop 1 tsp of the nutella in the middle, gathering the dough at the top to create a dome
5. Once the balls are formed, lay out on a lined baking sheet about 2 inches apart. Carefully flatten the tops of the cookies and bake for 9-11 minutes or until the cookies begin to turn golden brown. Because of the nutella in the center, the cookies may look under-cooked in the middle; however, the cookies will continue to cook even after they are out of the oven. Sprinkle with sea salt and cool.
Not so healthy to eat I must confess, but they're worth trying! ;-)
